Gillian est conceptrice de la scénographie et de costumes, et parmi ses réalisations, on peut citer : Tremblements (Espace Go) ; Sa dernière femme (costumes, Théâtre Rideau Vert) ; Beautiful (scénographie, Centre Segal) ; Kimberly Akimbo (scénographie, Mirvish/Centre Segal) ;  A Doll’s House (Canadian Stage) et Slave Play (scénographie, Canadian Stage) ; Mahabharata (costumes, Why Not Theatre), Major Barbara, Shadow of a Doubt, An Octoroon, The Russian Play (Shaw Festival), Hadrian, Louis Riel (costumes, COC), Othello, The Three Musketeers (costumes, Stratford Festival).

Gillian conçoit actuellement les scénographie d’Empire of Wild avec la Canadian Opera Company.

Gillian a reçu quatre prix Dora Mavor Moore, un prix Meta, et elle est la lauréate du prix Siminovitch 2021.
